INGREDIENTS

  • 6 BEEF LIVER STEAKS, VERY WELL TRIMMED
  • 4 TABLESPOONS OF VINEGAR
  • 1 GARLIC CLOVE, CRUSHED
  • 2 TABLESPOONS OF CORN OIL
  • 2 MEDIUM ONIONS, CUT INTO STRIPS
  • SALT AND BLACK PEPPER TO TASTE

PREPARATION

Season the steaks with salt, black pepper, 2 tablespoons of vinegar, and the crushed garlic. Heat up the oil and fry the steaks. To prevent them from being chewy, only brown each side for 3 minutes; remove and set aside. Put the onions into the pan, season with salt and black pepper and allow them to soften a bit. Add in the remaining vinegar and scrape the bottom of the pan, releasing the flavour and removing the steak’s browned residues. Serve the onions on top of the steaks.
