INGREDIENTS

  • 1 WHOLE CHICKEN, CUT AT THE JOINTS
  • JUICE OF 2 LIMES
  • 4 GARLIC CLOVES, CRUSHED
  • 1 KG OF OKRA 
  • 2 TABLESPOONS OF CORN OIL
  • 1 ONION, DICED
  • 4 TOMATOES, CHOPPED
  • 1 TABLESPOON OF ANNATTO
  • SALT AND BLACK PEPPER TO TASTE

PREPARATION

Season the chicken with the lime juice, 2 garlic cloves, salt, and black pepper. Put it aside in the fridge for 30 minutes. Wash the okra thoroughly and break away the extremities to check if they are good. Trim the stems, dry the okra and cut it into three equally sized pieces. Heat up the oil and sear the chicken – first with the skin down, then the other side; sear until golden. Remove from heat and set aside. In the same pot, braise the onion, annatto, remaining garlic, and tomato, until they whiter. Add the okra and braise until the slime is gone; remove and set aside. Return the chicken to the pot, cover with water and cook until tender. Add the tomatoes, cook for 5 minutes and serve at once.
