INGREDIENTS

  • 1,5 KG RED, RIPE GUAVAS 
  • 5 CUPS SUGAR

PREPARATION

Cut guavas in half (save the seeds for later), bring them to a boil and set aside. Squeeze the seeds, to get more pulp. Make a syrup with sugar and 2 cups of water, and cook ⅔ of the fruits, including the pulp, until it turns to a creamy paste (3 hours over low heat). Add the rest of the guava and cook for 1 hour, mashing the fruit, but leaving some pieces intact. Take off the heat and transfer to a baking dish covered with plastic wrap. Allow to cool and take it to the fridge, to set. Unmold and serve. To make all-creamy guava paste, use only 3 cups of sugar and cook all guavas from the start.
