INGREDIENTS

  • 6 EARS FRESH CORN
  • 1 LITRE MILK
  • 1½ CUP SUGAR
  • 1 TEASPOON SALT
  • 1 TABLESPOON CORNSTARCH
  • GROUND CINNAMON, FOR DUSTING

PREPARATION

Process corn kernels in a blender. Pass through a sieve and bring to medium heat with remaining ingredients. Cook for 30 minutes, stirring now and then. Allow to cool and serve dusted with cinnamon.

During the fresh corn harvesting season, when people would gather to make pamonha (Brazilian fresh corn tamale), curau was one of the most delicious sweets that I would eat at the farm, in São Paulo countryside. I liked it even when it was still hot. In Northeast states, it is called canjica.
