INGREDIENTS

  • 5 EGGS
  • 1 CUP SUGAR 
  • 1 LITRE MILK
  • ½ TEASPOON VANILLA ESSENCE 

SYRUP 

  • 1 CUP SUGAR 

PREPARATION

Prepare the syrup: cook sugar and ¼ cup of water,  over low heat, until lightly brown. Pour over a rectangular  10 cm x 20 cm baking dish; allow to cool. In a bowl, mix the eggs with the sugar. Add milk and vanilla essence. Transfer to the caramelized baking dish. Bake in water bath in the oven at 180°C for 1h20. To check if it is ready, move the dish to see if the pudding is set. Remove from the oven and slide a slim knife through the edges to detach. Unmold immediately. (Or let it cool, take to the fridge and, before serving, put the pudding over the heat to melt the caramel.)
