INGREDIENTS

  • ONE TRIMMED PIECE OF EYE OF ROUND OR RUMP SKIRT (2.5 KG)
  • 5 GARLIC CLOVES
  • 2 CELERY STALKS
  • ¼ CARROT
  • 2 TEACUPS OF RED WINE
  • 2 BAY LEAVES
  • 1 THYME SPRIG
  • 6 POTATOES, PEELED AND CUT IN HALF HORIZONTALLY
  • SALT AND BLACK PEPPER TO TASTE

PREPARATION

Pierce the meat with a knife and season it with a paste made from blended garlic, celery, carrot, wine, salt, and black pepper. Add the bay leaf and thyme and allow it to rest for at least 30 minutes. Cover the eye of round and the spices with aluminium foil and bake at 180°C for about 1 hour, or until tender. Meanwhile, cook the potatoes in water until al dente. Transfer them to the baking tray, cover with aluminium foil and bake for another 10 minutes. Remove the aluminium foil and bake for another 10 minutes before serving.
