INGREDIENTS
- 18 OVERRIPE BURRO BANANAS
- 1½ CUP SUGAR
- 1 CINNAMON STICK
- 3 CLOVES
PREPARATION
Peel the bananas and mash them with the hands. Heat sugar, cinnamon and cloves in a pan, until sugar melts. Add mashed bananas and cook for about 4 hours, or until it gets a very dark colour and starts to pull away from the bottom of the pan.

This recipe uses up overripe fruits that otherwise would be discarded – that’s one of the qualities of this Brazilian dessert that started to be prepared during the sugar era (16th and 17th centuries).
