INGREDIENTS
- 1 KG BEEF FEET, IN CHUNKS
- JUICE OF 1 LIME
- 1 LITRE MILK
- 3½ CUPS SUGAR
- GROUND CINNAMON TO TASTE
- 4 EGGS
PREPARATION
Wash clean the chunks of beef feet under running water with the lime juice. Bring it to a boil, discard the liquid, add more water and cook until the jelly comes out of the bone (to save time, use a pressure cooker). Release the jelly and process with the milk in a blender. Bring to the heat with sugar and cinnamon; cook until gets thicken and almost firm. Remove from the heat, allow to cool and add strained eggs, stirring well to become smooth. Place it in a bake pan covered with plastic wrap and let it cool inside the fridge until it gets solid. Hint: to make beef feet jelly, keep the water from cooking, add 2 cups of sugar, cook and let it reduce until it’s done. Allow to cool and serve.
