INGREDIENTS

  • 2 HEADS CAULIFLOWER, IN FLORETS
  • 3 CUPS MILK
  • ½ ONION
  • 1 BAY LEAF
  • 2 CLOVES
  • 2 TABLESPOONS UNSALTED BUTTER
  • 3 TABLESPOONS ALL-PURPOSE FLOUR
  • 1 PINCH NUTMEG OR PUXURI
  • 2 CUPS GRATED SEMI-CURED OR PARMESAN CHEESE
  • SALT TO TASTE

PREPARATION

Cook cauliflower in salted water until al dente; set aside. Heat the milk with onion, bay leaf and clove; when boiling, turn off the heat and set aside. Melt the butter and add the flour, stirring constantly. When it starts to smell like biscuit, pour in strained milk, little by little, whisking non-stop, in order to obtain a white sauce. Season with salt and nutmeg. Place the cauliflower on a baking dish, spread the sauce, add cheese on top and bake in the oven at 180°C for 15 to 20 minutes, or until the top is browned.
