INGREDIENTS

  • 10 TABLESPOONS INSTANT TAPIOCA GRANULES 
  • 3 CUPS MILK 
  • 200 ML COCONUT MILK (P. 290)
  • ½ CUP SUGAR 
  • 1 CINNAMON STICK 
  • 2 CLOVES 
  • 2 TABLESPOONS FRESH COCONUT MEAT, GRATED

PREPARATION

Hydrate tapioca granules in milk for 40 minutes. Bring all ingredients to cook under low heat, except coconut; stir constantly, so the granules can release the starch and thicken the porridge. Cook for 30 minutes, or until tender. Add grated coconut meat and cook for a while. Serve hot, pure or topped with ground cinnamon.
