This Brazilian beef cut, similar to U.S. top sirloin cap (fat on), also called rump cap, is triangular and has a uniform layer of fat covering the whole surface of one side, which should be thick and have a homogenous color. Very flavorful and tender, it can also be roasted and served with sauces, marinated, or stuffed.
