INGREDIENTS
- 2 TEACUPS OF WHITE WINE
- JUICE OF 1 LIME
- ½ ONION
- 4 GARLIC CLOVES
- 1 CELERY STALK
- 1 LEEK STALK
- 1 DEDO-DE-MOÇA PEPPER, DESEEDED
- 1 PORK LOIN, WEIGHTING ABOUT 2 KG
- SALT TO TASTE
PREPARATION
Blend the wine, lime juice, onion, garlic, celery, leek, pepper, and salt in a blender or food processor. Poke holes into the loin with a small knife and season with the marinade; set aside for 1 hour. Transfer to a baking dish or tray with part of the seasoning. Cover with aluminium foil and bake in a preheated oven at 180°C for about 1 hour, or until tender. Remove the aluminium foil and wait until its golden. Serve with braised collard greens and a simple farofa.
