INGREDIENTS
- 6 LARGE, RED APPLES
- 500 G SUGAR
- 4 TABLESPOONS GLUCOSE SYRUP
- 4 DROPS RED FOOD COLOURING
PREPARATION
Stick an ice cream stick on the bottom of each apple and set aside. Combine sugar, glucose syrup and 1 cup of water; stir to dissolve. Cook over low heat, without stirring, until it starts to boil. Lower the heat and cook for 15 minutes. Add the food colouring, cook for 1 minute and take the pan off the heat. Put apples under a silicone baking mat, or under a greased baking tray, and pour the liquid over each one of them. Wait for hardening and allow to cool.

Red, caramelized apple in a stick is everywhere during June Festivities, around squares and parks. It was created in 1959 by the Farre Family, Catalan immigrants established in the east region of São Paulo city. The Spanish pastry makers were inspired by Chinese caramelized fruits.
