Compared to long grain rice, it has smaller and rounder grains, slightly translucent, and a high starch content. When cooked, it becomes tender, creamy and flavorful. It is recommended to prepare one-pot dishes, such as the traditional Arroz de carreteiro (rice with salt-cured meat), but it can also replace the Italian arborio and carnaroli in risotto recipes.
