Part of the digestive system of birds, the gizzard sold in Brazil comes from all over the country, but mostly from Paraná and Rio Grande do Sul, where chicken, turkey and duck are commercially raised. It is high in nutrients, has a firm texture and intense flavor, but it is often rejected by the general public, like most offal. Still, it can be seen in the appetizer menus of many botecos throughout Brazil. Without the external skin, it is appreciated as an ingredient in sauces, side dishes, and stuffing recipes.
