Ribbon Fish

Also called largehead hairtail and belt fish, this long, slender fish with silver body swims the Brazilian coast from north to south. The fillets are thin, low in fat, and have a delicate flavor. Versatile in the kitchen, ribbon fish can be prepared breaded and fried, grilled, stewed, roasted, or escabèche.
