INGREDIENTS
- 500 G CARNE-SECA, DESALTED AND CUBED
- 2 CUPS COWPEAS
- 2 TABLESPOONS CORN OIL
- 1 ONION, CHOPPED
- 2 CLOVES OF GARLIC, CHOPPED
- 2 CUPS LONG-GRAIN WHITE RICE
- 4 TOMATOES, PEELED AND SEEDED, DICED
- ¼ BUNCH SCALLION, CHOPPED
- ¼ BUNCH CORIANDER, CHOPPED
- 2 CUPS COALHO CHEESE, DICED
- SALT TO TASTE
PREPARATION
Cook carne-seca in the pressure cooker for 30 minutes. Cook the beans with a little bit of salt until al dente; turn off the heat and keep the water used for cooking them. Heat the oil and sauté onion and garlic, until soft. Add rice and stir a little longer. Add carne-seca and cowpeas. Combine and pour in the water kept from cooking, until it covers the cowpeas up to 4,5 cm. Cook until rice is soft. Add and combine tomato, scallion, coriander and cheese. Heat for a minute and serve.
