INGREDIENTS
- 12 BITTER ORANGES
- 1 TABLESPOON BAKING SODA
- 1,5 KG SUGAR
- 1,5 LITRE OF WATER
PREPARATION
Wash the oranges and quarter them. Remove the pulp, including the pith, saving the petal-shaped peels. Bring peels to a boil and take them to a cold water and baking soda bath. Keep in the freeze overnight. Make a thread-stage sugar syrup with 500 g of sugar and 500 ml of water; cook the oranges in this syrup for 30 minutes. Allow it to cool and keep in the fridge overnight. Throw away the syrup and repeat the process with same quantities of water and sugar, keeping in the fridge overnight. On the last day, make the syrup with the last amount of water and sugar, and let it get thicker. Add oranges and cook until very tender.
