Cheese made with raw (unpasteurized) milk obtained from jersey cows pasture-raised in the Serra da Mantiqueira region, which encompasses the states of Minas Gerais, São Paulo, and Rio de Janeiro. Hence the fact it is also known as “Mantiqueira cheese”. Under the deep-yellow rind, which may become greyish as it ages, the firm yet soft interior has a mild flavor and shows several visible holes.
