With curlier and shorter leaves than escarole, with which it is often confused, curly endive may be somewhat bitter, a flavor that goes well in salads, soups, stir-fries, dumplings and sauces. Although São Paulo and Rio de Janeiro are the largest producers, consumption is widespread across the country.
