Often confused with muscovy duck, the domestic duck is smaller, has tenderer meat, less pronounced flavor, and not as much fat – and it is cheaper. In Brazil, it is a popular food in the South, a habit inherited from the German immigrants. In Santa Catarina, in cities like Brusque and Blumenau, domestic duck appears on many menus stuffed with giblets, roasted and served with red cabbage, potato and applesauce. It can also be deep fried or stewed.
