INGREDIENTS

  • 900 G OF SALTED PAICHE STEAKS OR FILLETS
  • JUICE OF 2 LIMES
  • 2 TEACUPS OF ALL-PURPOSE FLOUR
  • 1 KG OF PURE AÇAÍ PULP
  • 1 PINCH OF SALT
  • 1 ½ TEACUPS OF FARINHA D’ÁGUA
  • CORN OIL, FOR FRYING

PREPARATION

Desalt the paiche, soaking it in ice cold water for 20 hours, changing the water three times. Taste to see if it is desalted enough or if it should soak for longer. Season with lime juice and coat with all-purpose flour. Fry in hot oil, until golden. Blend the açaí pulp with a pinch of salt, until it is creamy. Serve the fish along with the açaí and farinha d’água.
