INGREDIENTS
- 1,5 KG GREEN FIGS
- 1,5 KG SUGAR
- 1 CINNAMON STICK
- 2 CLOVES
PREPARATION
Wash the figs and poke some holes with a needle or a fork, in order to absorb the syrup. Bring them to a boil twice, replacing the water, to eliminate the bitter taste. Figs must cook with same amount of sugar in weight – it’s better to check with a kitchen scale. Bring fruit and sugar to a large pot with cinnamon and cloves. Cover with water and cook over low heat for about 2 hours; if necessary, add more water to dilute the syrup. Allow to cool before serving.
