Allium fistulosum L.
Herb with slender, cylindrical leaves that taste like raw onions, but are milder. It is used fresh, finely sliced, to finalize recipes ranging from salsas, soups, salads and farofas (seasoned manioc flour) to cooked and roasted meals in general. Besides being so versatile, it can be successfully frozen. In supermarkets and farm markets all over Brazil, green onions / scallions can be bought in bunches, on their own or combined with parsley and/or cilantro – a mixed bunch called cheiro-verde (literally “green smell”). It is also sold freeze- dried. Produced year round, the best are harvested in December.
