INGREDIENTS

  • 900G OF GROUND BEEF (BEEF KNUCKLE)
  • 3 TABLESPOONS OF CORN OIL
  • 1 ONION, DICED
  • 3 GARLIC CLOVES, MINCED
  • 1 TABLESPOON OF TOMATO PASTE
  • 4 PEELED, DESEEDED TOMATOES, CHOPPED
  • 3 POTATOES, CUT INTO MEDIUM CUBES
  • ½ A TEACUP OF CHOPPED OLIVES
  • ½ BUNCH OF PARSLEY, CHOPPED
  • SALT AND BLACK PEPPER TO TASTE

PREPARATION

Season the meat with salt and black pepper. Heat the oil in a wide pot and braise the meat until thoroughly browned. Add the onions and garlic, braise until translucent and put in the tomato paste. Add the tomatoes and potatoes, cover with water and add salt if necessary. Cook over low heat, until potatoes are soft. Put in the olives, stir and heat up. Garnish with parsley.
