INGREDIENTS
- 1 KG OF DESALTED JERKED BEEF
- 1 KABOCHA PUMPKIN
- 8 TABLESPOONS OF CLARIFIED BUTTER
- 2 ONIONS, CUT INTO STRIPS
- SALT TO TASTE
PREPARATION
Cover the jerked beef with water and cook for about 2 hours, or until tender – if should reduce to about half. Bake the pumpkin at 200°C for 30 minutes, or until it is very soft. Cut it in half, dispose of the seeds, and cut it into half-moons; set it aside. Cut the beef into small cubes and braise them in clarified butter; add the onions and braise them. Grill the pumpkin, season with salt and clarified butter and serve with the beef.
