Pisum sativum L.
From July to September, you can find this legume fresh at fairs, markets and grocers. The rest of the year, canned, frozen or dehydrated versions prevail. Firm on the outside and creamy on the inside, peas go well with eggs, pasta, salads, recipes containing ground beef, poultry and fish, as well as in soups and risottos, where they sometimes are the main ingredient. One variety, snow peas, can be steamed, boiled or added to stir- fries. Rio Grande do Sul, Minas Gerais and Goiás are the top producers in Brazil.
