Artemisia dracunculus L.
Originally from western and northern Asia, this herb has an intense aroma and flavor, with anise-like refreshing notes. Also called French tarragon, the ingredient is an integral part of the fines herbes (together with parsley, chervil and green onions / scallions), it is the main seasoning in Béarnaise sauce (emulsion made with butter, eggs, vinegar and white wine), and is often used to flavor butters, vinegars, olive oils and mustards. It goes well in dishes containing mushrooms, eggs, cheese, fish and chicken. In folk medicine, it is known for healing constipation and insomnia.
