Unripe cashew nuts are used to prepare a popular and much appreciated dish of the Bahia Recôncavo, Frigideira de maturi. As writer Jorge Amado teaches in his book Tieta, the recipe is simple: sauté the unripe cashew nuts with dried shrimp, coconut milk and seasonings, cover with beaten eggs and bake in the oven until golden brown. Tender, with a flavor reminiscent of almond, they can be successfully frozen.
