When you hear the word salsicha in Portuguese, the first thing that comes to mind is hot dog, found everywhere in the country: from the simplest street vendor to those places that are keen to using only handmade or exclusive products. The difference is that, in Brazil, hot dogs are always made with pre-cooked sausage, the kind that has a puréed, uniform texture. These are called salsicha in Portuguese, as opposed to linguiça, which is used to refer to sausages, pre-cooked or not, that have visible pieces of meat and fat. In industrial manufacturing, scraps of pork and beef are ground together very finely, and then seasoned, cooked, cooled and dyed – a solution of annatto seeds.
