INGREDIENTS

  • 800 G OF GREY TRIGGERFISH, OFFAL REMOVED
  • JUICE OF 2 LIMES
  • 2 TEACUPS OF ALL-PURPOSE FLOUR
  • 3 EGGS, BEATEN
  • 3 TEACUPS OF CORNMEAL
  • CORN OIL, FOR FRYING
  • SALT AND BLACK PEPPER TO TASTE

PREPARATION

Clean the fish thoroughly and remove the head, skin, and tail. Season with lime juice, salt, and black pepper. Coat it with all-purpose flour, dip into the eggs and, finally, coat with cornmeal. Deep fry it in hot oil until it’s lightly golden. Drain in a paper towel and serve at once.
