INGREDIENTS
- 500G OF WHEAT OR YELLOW HAKE
- 1½ LEMON JUICE
- 1 yolk
- 1 SPOON (SOUP) OF MUSTARD
- ½ CORN OIL BOTTLE
- ¼ PACK OF CHOPPED PARSLEY
- ¾ CUP (TEA) OF PRESERVED VEGETABLES
- 1 CUP (TEA) OF WHEAT FLOUR
- 1 WHEATED EGG
- 2 CUPS (TEA) OF CORNAL MEAL
- CORN OIL FOR FRYING
- SALT AND BLACK PEPPER TO TASTE
PREPARATION
Cut the fish into strips and season with the juice of 1 lemon, salt and black pepper. Set aside for 15 minutes. Meanwhile, make the tartar sauce: beat the yolk with the mustard and add the corn oil in a string, beating without stopping with a wire whisk, until you get a mayonnaise. Season with ½ lemon juice, salt and black pepper. Add the parsley and chopped vegetables. Sprinkle the fish in the flour and pass through the egg and cornmeal. Fry in preheated oil and serve with the sauce.
