Fresh Corn Custard

INGREDIENTS

  • 6 EARS FRESH CORN
  • 1 LITRE MILK
  • 1½ CUP SUGAR
  • 1 TEASPOON SALT
  • 1 TABLESPOON CORNSTARCH
  • GROUND CINNAMON, FOR DUSTING

PREPARATION

Process corn kernels in a blender. Pass through a sieve and bring to medium heat with remaining ingredients. Cook for 30 minutes, stirring now and then. Allow to cool and serve dusted with cinnamon. 

 

IN DETAIL: During the fresh corn harvesting season, when people would gather to make pamonha (Brazilian fresh corn tamale), curau was one of the most delicious sweets that I would eat at the farm, in São Paulo countryside. I liked it even when it was still hot. In Northeast states, it is called canjica.
