Epinephelus marginatus e Epinephelus morio
With characteristics similar to flounder and snook − white flesh, tender and flavorful − grouper works perfectly in several preparations. It can be roasted in the oven with shrimp and potatoes, it renders a great moqueca (fish stew), and it is a good addition to broths and soups. Since December 2014, two species of grouper, dusky grouper (Epinephelus marginatus) and red grouper (Epinephelus morio), were added to a list of endangered species created by the Brazilian Environment Ministry. Because they are considered “Vulnerable”, these grouper varieties should be fished following the sustainability standards.
