Vigna unguiculata
With light-colored, firm and very small beans – only 0.2 inch long –, it is produced in the vicinity of Santarém, state of Pará. The cultivation of this species, which was slowly disappearing from the local tables, resumed in 2013, incentivized by Embrapa (Brazilian Agricultural Research Corporation). Manteiguinha is used in mashes, salads, Baião de dois (rice and beans dish) and Tutu (beans and manioc or flaked corn meal mush).
