INGREDIENTS

  • 500 G OF CHUCK OR SHANK, CUT INTO 2 CM CUBES
  • 2 TABLESPOONS OF OLIVE OIL
  • ½ ONION, DICED
  • 2 GARLIC CLOVES, MINCED
  • 2 PEELED AND DESEEDED TOMATOES, CHOPPED
  • 6 LARGE POTATOES, CUT INTO CUBES
  • ½ BUNCH OF PARSLEY AND SCALLIONS, CHOPPED
  • SALT AND BLACK PEPPER TO TASTE

PREPARATION

Season the meat with salt and black pepper; sear each side on olive oil. Add the onion, garlic, and tomatoes, cover with water and cook for about 1 hours and a half, until the meat is very tender. Add the potatoes and cook until they are soft. Take 2 teacups of cooked potatoes and process them in a blender or food processor until they reach a puree like consistency. Add it to the soup and stir, so it is smooth. Adjust seasoning, sprinkle in the parsley and scallions, and serve.
