INGREDIENTS

  • 2 CUPS MILK 
  • 1 CUP SUGAR 
  • 2 YELLOW PASSION FRUITS 
  • 8 EGG YOLKS 
  • 2 TABLESPOONS CORNSTARCH 
  • 2 CUPS WHIPPING CREAM

PREPARATION

Bring the milk to a boil with half the sugar and passion fruit juice, seeded (strained). Meanwhile, beat egg yolks and the rest of the sugar for 3 minutes,  with a wire whip, until it gets pale. Add cornstarch and stir well.

When the milk starts to boil, add beaten yolks in a constant stream, whisking non-stop. Cook altogether over low heat, stirring, until thicken. Keep cooking for 3 more minutes and turn off the heat. Transfer the cream to a bowl, cover with a plastic wrap and, when cooled, take it to the fridge. Whip the whipping cream until thickened. Fold it gently over the passion fruit cream, keeping it airy and smooth. Serve chilled.
