Oncorhynchus mykiis
River fish deeply associated with Serra da Mantiqueira, the mountain range between the states of São Paulo, Minas Gerais, and Rio de Janeiro, where it is farmed in several locations. But it can also be found in the mountain regions of Santa Catarina and Rio Grande do Sul. Whole, it is usually roasted; cut into fillets, it is pan grilled. A common dish on the menu of restaurants is Truta com amêndoas (trout with almonds). There is also a smoked version.
