INGREDIENTS

  • 1 KG OF TOMATOES
  • 750 G OF GROUND BEEF (BEEF KNUCKLE)
  • 3 TABLESPOONS OF CORN OIL
  • 1 ONION, DICED
  • 4 GARLIC CLOVES, MINCED
  • 1 BAY LEAF
  • 2 TABLESPOONS OF BUTTER
  • 1½ TEACUPS OF FINE CORNMEAL
  • 1 TEACUP OF GRATED PARMESAN CHEESE
  • SALT AND BLACK PEPPER TO TASTE

PREPARATION

For the sauce, wash the tomatoes, quarter them and cook over low heat, without water. Cook until they fall apart, process them in a blender quickly, pass it through a sieve and set it aside. Season the meat with salt and black pepper and braise it in oil. When the meat dries out, add the onion and 2 garlic cloves; braise it for a little longer, until they wilt. Add the tomato sauce and bay leaf; cook for 20 minutes. Meanwhile, braise the remaining onion and garlic in butter for 3 minutes. Add 4 ½ teacups of water and wait until it boils. Season with salt and slowly add the cornmeal, stirring constantly to avoid lumps. Cook over low heat for 10 minutes, stirring continuously. Transfer to a serving dish, cover with sauce and serve with grated cheese.
