INGREDIENTS

  • 1 KG OF EYE ROUND 
  • 200 G OF CALABRESA SAUSAGE, CHOPPED 
  • 1 CARROT, CUT INTO STICKS 
  • 10 GREEN OLIVES, CHOPPED 
  • 1 TABLESPOON OF BUTTER
  • 1 TABLESPOON OF OLIVE OIL
  • 2 TEACUPS OF BEEF STOCK
  • SALT TO TASTE 

PREPARATION

Season the meat with salt. Using a sharp knife, make a hole that pierces through the middle segment of the meat. Stuff it with the sausage, carrot, and olives. Heat the butter and the olive oil in the pressure cooker and sear the meat on all sides. Put in the stock, lock the lid, and cook over low heat for 30 minutes after it has gained pressure. After pressure has been released, open the lid and cook for another 5 minutes, or until the sauce has thickened. Cut the meat into thin slices and serve with the sauce.
