Caiman crocodilus yacare
Animal commonly found in the Pantanal wetlands, with white meat of mild flavor, it is highly consumed in the region and used in several preparations. The most popular cuts − thighs, tenderloin and tail steaks, loin and back meat − can be stewed, fried, roasted, or cooked and added to fritters, broths and fish stews. It can also be used to prepare sausages. The animal used for cooking must be raised in captivity, subject to the regulations and monitoring of the Brazilian Institute of Environment and Renewable Natural Resources (Ibama).
