INGREDIENTS
• 2½ cups manteiguinha beans
• 1 bay leaf
• 8 tomatoes, peeled, seeded and diced
• 1 onion, diced
• ¼ bunch coriander, chopped
• ¼ bunch scallion, finely sliced
• ¼ bunch parsley, chopped
• ¾ cup olive oil
• ¼ cup lime juice or vinegar
• Salt and pepper to taste
PREPARATION
Cook beans in plenty of water with bay leaf and salt to taste. When tender, drain and let cool. Combine beans, tomato, onion and chopped herbs. Season with olive oil, lime juice, salt, and pepper. Toss well and serve.
